If you are comfortable with a command line only version of linux you might consider Trustix, which can be found at www.tawie.org. It's initial roots are in RedHat so most Redhat RPMs work with this distro. The whole distribution fits on a single CD and it is one of the most secure distributions out there. All non-critical services are shut off by default so you have to make a conscious effort to open up wholes.
